I use the US-05 yeast in the majority of my beers. It's easy to use, costs less and works extremely well. I love it.

Ahh, tasty thread. Stone Ruination, SweetWater IPA and 420, Ithaca Flower Power IPA and Bell's Two Hearted Ale are some of my favorites.

I usually like what Sam Adams does. Sam Adams Imperial White is absolutely terrible. Too sweet and so heavy. You sucks Imperial White.

Braumeister HELP!

My Hefeweisen was bottled 2 months ago now, and I'm still not happy with the level of carbonation (which seems to be a recurring theme in my homebrews).

WTF!

The bottle 'pops' when I open it, and there's some foam when I pour it into a glass, but it just fizzes out.

Do I just have to be more patient?

Are you using enough sugar when you bottle?

try Krausening. That's that I used to do. Save 1 liter per 5 gallons of the original wort and add it back in just before bottling.

That's the old school german method of bottling! Nice. You can also use dry malt extract

Double IPA night.

Alchemist - insanely hoppy but balanced out with fruity citrus. Love the hazy appearance with with visible yeast. this one is one of a kind. serious fruit juice pleasure.

Stone Ruination - first time I had it and really impressed/ a nice fruity, hoppy and piney taste while in your mouth. aftertaste is really hoppy though, more so than Alchemist which finishes with a grapefruit mango thing. Incredible balance. A bit steep at $17.99 a six pack.

If you are a hardcore hop guy - the Stone might be more your thing.

You can't go wrong with either - unless you don't like hops. Then you can go very wrong with both.

Stokes stay away from these - don't attempt to pour them into your Donald Duck plastic tumbler with the built-in straw.

Both get A's in my book.
