I think you are mis-remembering the quality of these variety shows. They really were not that good and in the few instances where it worked, it was extremely difficult to sustain.
I was a child of the 70s, and these were all shows that my grandparents watched. They would put on Lawrence Welk, it it was like a death sentence to me.
not Lawrence Welk, I would not watch that...basically they were crappy shows that were a ton better than today's crappy shows is what I guess I'm trying to say. :D

With shows like Mad Men, Breaking Bad, The Wire, The Sopranos, Rome, Boardwalk Empire, etc I couldn't disagree more.
There is tons of crap out there, but that is only because there are 300 channels. Back in the day you had 3 networks with original programming and the best they could do was almost always terrible in comparison.
That's funny...my wife and my youngest son watch all of those talent shows and love them, and I am always asked to leave the room because of my commentary on the performances.
I like Discovery ID, NatGEO, TruTV (which Charles Barclay described as "BET for White People", and a few of the dramas on AMC (Walking Dead, Mad Men, Breaking Bad, and the Killing). I'm also a sucker for all the paranormal shows, like the Haunted, a Haunting, and Fact or Faked.
Love that show. I wish there were more shows on TV like it.
The show I miss the most is Law & Order. SVU is good, but nothing beat the original.
